Ingredients
Soup
- 250 grams Pork Bones, marrow or knuckle
- 300 grams Lotus Root, sliced, frozen or fresh
- 100 grams peanuts, raw, de-shelled
- 1 piece carrot, peeled, cut into thick chunks
- 10 pieces Dried Pitted Red Dates, (optional)
- 1.5 litres water
- 1 tablespoon soy sauce, to taste
- 2 tablespoons chinese cooking wine

1. Place pork bones, lotus root, peanuts, carrot and dried pitted red dates into the TM basket.
2. Add 1L water, soy sauce and Chinese cooking wine into the TM bowl, then lower the TM basket into the bowl.
3. Cook on Varoma temperature, speed 1 for 45 minutes.
4. Then add the 500ml water and continue cooking on Varoma/speed 1 for another 15 minutes.
Place the ingredients from the TM basket into a ThermoServer, then fill it with the broth from the TM bowl.

Tip
Pork bones with marrow will have the best taste for this soup, however you can also use pork ribs.
If you have extra pork bones than what's in the ingredients, place them on the Varoma tray and steam along the cooking step. The extra juices from the bones will drip into the broth, plus you can add the pork bones to the soup bowl after cooking.
You can also serve this soup with rice.
