Ingredients

Soup

  • 3 tablespoon TM Chicken stock concentrate or powder
  • 750 grams water
  • 1 can coconut milk, 400 ML
  • 200 grams coconut cream
  • 1 long red chilli
  • 6 cm piece of ginger, Peeled
  • 6 Kaffir lime leaves, chopped
  • 2 stalks Coriander root (Cilantro) washed
  • 400 grams Chicken thigh fillets, trimmed and sliced
  • 60 grams Snow peas (mange tout), Sliced
  • 2 stalks green onion, Sliced to your preference
  • 1 tablespoon fish sauce
  • 1 Juice of lime
  • Coriander leaves and extra sliced chilli; to serve

Recipe's preparation

    Method
  1. Place chilli (seeds removed if preferred), coriander root and roughly chopped ginger into TM mixing bowl, insert measuring cup and chop at speed 6 for 10 seconds.

    Scrape down the sides of the bowl.

    Add coconut milk, coconut cream, water, stock and kaffir lime leaves to mixing bowl, insert measuring cup and cook at 100 degrees for 10 minutes on speed 1.

    Add chicken to mixing bowl, insert measuring cup and cook for 10 minutes on speed 1 Counter-clockwise operation"Counter-clockwise operation" at 100 degrees.

    Add snow peas and spring onion and cook for a further 2 minutes, speed 1 Counter-clockwise operation"Counter-clockwise operation" at 100 degrees.

    Add fish sauce and lime juice and stir Counter-clockwise operation"Counter-clockwise operation" on speed 1 for 1 minute. Serve with chopped chilli and coriander leaves.

    I love this recipe. I use the whole 400 ml can of coconut cream so just reduce the water by 200 ml. No chillies in there for me, but everything else is as per the recipe. It freezes well.

    Big donna fan and this was just great. We omitted the chilli for the children and added vermicelli so it was like chicken noodle soup.

    This is so Amazing...love, love, love this soup...my go to.  I just use vegetable stock, add noodles, use coconut water instead of milk and light coconut cream as prefer a low fat soup. Thank you for great recipe

    Delicious - the whole family loved this. Next time will also add prawns and some asian vegies. I also added vermicelli noodles to the bowl and then ladled the soup over the top which helped fill up the kids and husband.

    Absolutely yummy! I used my own home made chicken stock, instead of the stock concentrate and  water. Also added some lemongrass.
