1. Place garlis and onion into mixing bowl and chop 3 sec / Spd 7
2. Scrape down the sides with spatula. Add olive oil and saute 3 min / 120c / Spd 1
3. Add water and stock paste
4. Insert simmering basket and add leek and sweet potato into basket
5. Cook 22 min / Varoma / Spd 1
6. Remove simmering basket using the spatular as handle and tip the leek and sweet potato into mixing bowl
7. Puree 1 min / Spd 5 increasing gradually to Spd 9
8. Serve Hot

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. This soup is delicious! It is nice enough to serve to guests and is healthy! I just added more sweet potato and a 100ml more water as I like a decent serve of soup. This is a keeper. Thanks.
This is a great recipe. I found the soup to be quite thick once pureed, so I added 200g of boiling water & another heaped teaspoon of stock paste. Then just mixed on speed 7 for 3 seconds.
I made this tonight in my TM31. I just used the varoma temp to sauté the garlic & onion.
