Ingredients
Bacon, Cheese & Veggie Quiche
- 2 sheets Puff pastry, thawed
- 1 brown onion, (small), peeled & cut in half
- 150 grams red capsicum, deseeded & roughly chopped (approx. 1/2 capsicum)
- 200 grams shortcut bacon rashers, trimmed of fat & roughly chopped
- 100 grams zucchini, roughly chopped
- 20 grams olive oil
- 100 grams Mozzarella Cheese, chopped into small pieces, if not using grated
- 6 eggs, cracked
- 100 grams thickened cream
- 1/4 tsp salt
- 2 pinches black pepper, freshly ground

- Preheat oven to 180°C.
- Grease a quiche dish with oil & line with puff pastry. Allow the edges to overhang slightly. Prick the base & sides with a fork. Place baking paper on top, then top with pie weights, uncooked rice or similar - anthing ovenproof that will weigh the pastry down. Blind-bake for approximately 15 minutes.
- Add onion, capsicum, bacon & zucchini to mixing bowl. Chop 3 seconds, speed 5, MC on.
- Scrape down mixing bowl. Add olive oil. Cook 5 minutes, Varoma temperature "Counter-clockwise operation" speed 1, MC off.
- Once pastry has finished blind-baking, remove from oven (but don't turn oven off). Remove whatever you used to weigh the pastry down & discard baking paper. Set aside pastry-lined quiche dish to cool slightly.
- Pour contents of mixing bowl onto a large plate & spread out to also allow to cool slightly.
- Without washing mixing bowl, add cheese. Chop for 5 seconds, speed 7, MC on.
- Add eggs, cream, salt & pepper. Mix 10 seconds, speed 5, MC on.
- Once cooled slightly, scrape contents of plate into quiche dish. Spread mixture evenly over the pastry.
- Pour contents of mixing bowl into the quiche dish (over the top of the bacon & vegetable mixture).
- Bake in oven for 20 minutes, or until cooked & pastry is golden.
- Serve warm or cool.
Tip
You may wish to serve with a salad &/or a spoonful of tomato chutney.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
