- 125 g dried apricots
- 100 g carrot, roughly chopped
- 30 g chia seeds
- 50 g macadamia oil
- 10 g coconut (desiccated)
- 1 egg
- 1 tablespoon orange zest
- 60 g orange juice
- 85 g wholemeal flour
- 150 g plain flour
- 100 g low fat milk OR yoghurt
- 50 g brown sugar
- 2 teaspoon bicarbonate soda
- 1 teaspoon mixed spice

1. Preheat oven to 180 degrees and line a muffin tin with patty pans
2. Add carrot and apricots to bowl and grate for 15-20 seconds on speed 6 and scrape down the sides
3. Add yoghurt (OR milk), oil, orange zest, orange juice and egg to the bowl and mix for 10 seconds, speed 4 reverse
5. Add all remaining ingredients and mix for 15 seconds, speed 4, reverse
6. Fill muffin tray cups almost to the top and bake for ~15 minutes.
Tip: these can also be made using mini muffin trays for kids or smaller serves.

Tasty really good. Nice and moist. We like a heavier muffin so I substituted some of the flour with oats and LSA. Thank you for the recipe.
Sure can - they freeze really well. Just defrost and enjoy. Can also heat up in microwave for 10-20seconds if you like the take the chill off.
