KFC style coating
- 1 tsp Oregano
- 1 tsp tarragon, dried
- 1 tsp Sage
- 1 tsp Thyme
- 1 tsp chilli
- 1 tbsp marjoram
- 1 tbsp black peppercorns
- 1 tbsp paprika
- 1 tbsp Onion Flakes
- 1 tbsp rock salt
- 3 tbsp dried garlic
- 450 g plain flour
Buttermilk marinate
- 2.5 cups buttermilk
- 4 tsp Minced garlic
- 1.5 tsp Regular yellow mustard
- 1/2 tsp black pepper
- 1 tsp kosher salt

- Place all herbs and spices into bowl and mix for 20 sec/ sp9. Add flours and mix for 20 sec/ sp 5. Place enough in bowl to do a double coat of chicken.
Buttermilk marinate.
place all ingredients into bowl and mix for 20 sec/ sp4.
pour mixture into a deep dish and it is ready to place any type of chicken into it. I use 1 kg of chicken wings and coat them in the buttermilk mixture. Then place in the kfc coating, shake excess off and then place in the buttermilk again and then straight into kfc coating. Have a wok of oil or deep fryer ready and then place chicken pieces into oil until a dark golden brown colour, as pictured above.

Tip
I alternate and use chicken wings, drumsticks, breast and thighs. The breast and thighs get chopped up into cubes and turn out like popcorn chicken.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
