Ingredients
Spinach and Cheese Pie
- 1 package Filo Pastry
- 500 grams Fresh ricotta cheese
- 400 grams feta cheese
- 7 eggs, Reserve one egg for the top layer
- 250 grams Milk
- 130 grams thickened cream
- 1 bunches English spinach, fresh
- 115 grams canola oil

- Preheat your oven to 200 degrees. Grease baking tray, line with baking paper if you prefer.
- Place washed spinach leaves in mixing bowl. Chop 5 sec, speed 5. Add ricotta mix 5 sec, speed 3. Set aside.
- No need to clean bowl. Place all ingredients in bowl except oil and filo pastry. Mix 10 sec, "Counter-clockwise operation" speed 4.
- Layer one sheet of filo pastry on the bottom of the tray and sprinkle with oil, continue process to make 4 layers.
- Scrunch one sheet of filo pastry, place in tray. continue until one layer covers the tray. Sprinkle with oil, then start ladelling half the egg mixture to cover the entire tray.
- Blob half the spinach mixture over the layer. Then repeat filo layer (scrunch each sheet) sprinkle with oil, pour over egg mixture and blobs of spinach mixture.
- Last 3-4 layers of filo pastry on top, oil each layer. Brush top layer with some milk and one egg, tuck in the sides neatly.
- Cover tightly with foil, bake in the oven (200 degrees) for 20mins.
Remove foil return in oven for approx 15-20mins to brown nicely on top. (Depending on your oven) - Remove from oven and cover with a clean tea towel for 10mins before serving. Enjoy!
