Ingredients

Spinach & Gruyère Quiche

  • 1 QTY Shortcrust Pastry, From the BCB
  • 4 large eggs
  • 1 Pinch nutmeg
  • 300mls cream
  • 250g frozen spinach leaves, Thawed and squeezed dry
  • 3/4 tsp salt
  • 1 Onion or shallot, thinly sliced
  • 120g Gruyère cheese, grated

Recipe's preparation

  1. Make the pastry according to the BCB and rest in the fridge for 1/2 hour

    Roll out the pastry and line a fluted quiche pan cover with baking paper or oven safe cling wrap, then add baking beads or rice/beans. Cover and refrigerate for another 15 mins

    Preheat oven 180°C
    Bake the crust for 20 mins then reduce the temp on the oven to 160° remove the beads (carefully as they're very hot) from the crust and bake for a further 10 minutes.

    Meanwhile in the Thermomix add all the filling ingredients and mix 30 Seconds REVERSE Speed 3.

    Pour the filling into the quiche crust and bake @ 160°C for 45-50 minutes until golden on the top and set firm.

    Serve hot or warm with steamed vegetables or cold with a salad.
