Ingredients
Apple and Blueberry Cake
- 190g Self Raising Flour
- 170g castor sugar
- 125g unsalted butter (room temperature cut into cubes)
- 1 tsp vanilla extract
- 2 eggs
- 150g Milk
- 1 apple ( cored and thinly sliced)
- 100g Blueberries ( fresh or frozen )
- 2 tbsp Demerara or Coffee sugar crystals)
- 2 tbsp soft icing sugar

- 1. Preheat the oven to 180c ff and prepare a baking tray, greased and lined with baking paper.
Can use 23cm round or square pan - 2. Add butter, sugar and vanilla extract to the mixing bowl and Mix 5 sec / speed 5. Scrape the sides of the mixing bowl
- 3. Add eggs, milk and flour to the mixing bowl and Mix 5 sec / speed 5, scrape around the bowl and repeat 5 sec / speed 5.
- 4. Pour the batter into the prepared baking pan, top with apple slices and blueberries
- 5. Bake in preaheat oven at 180c ff for for 35 minutes
- 6. Let the cake cool in the pan for 5 to 10 min then take out, sprinkle with icing sugar, slice and serve.

Tip
You can use other fruit apart from apples and blueberries if you wish !!
