- 260g raw sugar
- 20g cocoa
- 110g bakers flour
- 150g good quality dark chocolate
- 150g butter chopped
- 3 eggs
- 1 tsp vanilla essence
- icing sugar to sprinkle

Preheat oven to 180 degrees. Line square 20cm x 20cm cake tin with baking paper.
Mill sugar for 4 seconds on speed 9. Add cocoa and flour and mill for 5 seconds on speed 10. Set aside.
Chop dark chocolate on speed 5 for 5 seconds. Add chopped butter and melt for 3 minutes at 60 degrees on speed 2. Scrape down sides of bowl and melt for further 1 minute at 60 degrees on speed 2.
Add reserved flour mix, 3 eggs and vanilla essence and mix for 30 seconds on speed 3.
Pour into prepared tin and bake in oven for 30-40 minutes. When brownies have cooled, slice and sift icing sugar lightly on top.
Tip
The brownie is meant to be "gooey". It will firm up slightly as it cools. Do not over cook!

Thank u for this recipe. I reduced the sugar to 200 gms and used left over milk chocolate from Easter. Still tasted great. Not too rich or sweet.

A HUGE hit!
These were yummy and easy. I served them with a slice of fresh strawberry on top. I also sprinkled some smarties on the uncooked mixture and as it cooked they sunk into the brownie to make a special surprise.
