Ingredients
Carrot and walnut spice cake
- 165 g walnuts
- 240 g carrots, peeled and chopped into 2.5cm lengths
- 2 eggs
- 60 g vegetable oil
- 125 g Milk
- dash vanilla extract
- 120 g brown sugar
- 2 tsp cinnamon, ground
- 150 g Plain Wholemeal Flour
- 1 tsp baking powder
- 150 g SR flour
Icing (optional)
- 200 g icing sugar
- 35 g cream, more if needed
- cinnamon sugar for sprinkling, (optional)

- Preheat the oven to 180°C.
Grease and line a 20cm round or square pan.
Springforms work the best
Chop the walnuts, 4secs/sp9. Set aside.
Chop the carrots, 4secs/sp9.. Scrape. Turbo once or twice until chopped to your liking if some larger pieces remain.
Add the remaining ingredients (except for the walnuts) and combine 15-20secs/sp4.
Return the walnuts to the "Closed lid" and 10secs/sp3.5/"Counter-clockwise operation"
Bake 45-60mins or until cooked.
Cool in the tin for 10 mins before cooling on a wire rack.
Ice if you wish or simply dust with a blend of 1tblspn icing sugar,
combined with 1/4 tspn cinnamon. - Blitz the icing sugar 5secs/sp9 to remove any lumps.
Add the cream and blend 10secs/sp4, or until blended.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

I didn't have wholemeal flour so just did it with white but raw recipe tastes delish! (yes guilty bowl licker here).
Only thing I'd change next time is not to have the walnuts as chopped (hubby's preference).

Another beautiful cake, my icing turned out not quite so fluffy next i might whip the cream a bit first then add the icing sugar, but the cake was a lovely smooth flavour and great for those that don't like the big walnut pieces of a traditional carrot cake. Thankyou for the recipe.
