Ingredients
Cherry Almond Cake
- 220 g raw sugar
- 180 g softened butter
- 1 teaspoon almond essence
- 3 large eggs
- 150 g plain flour
- 75 g Self Raising Flour
- 80 g Milk
- 150 g Red Glace Cherries, quartered
- 70 g Green Glace Cherries, quartered
- 90 g slithered almonds
- 160 g sultanas

Preheat oven to 160 degrees c. Line base and sides of a 22 cm round cake tin with three thicknesses of baking paper
Place raw sugar in bowl and mill for 4 seconds on speed 9.
Add butter and almond essence and mix for 20 - 30 seconds on speed 5. Scrape down sides of bowl
Add eggs through hole in lid while blades are running on speed 5. Will take about 30 seconds
Scrape down sides of bowl
Add the flour and milk and mix for 5 seconds on speed 5
Add cherries, sultanas and almonds and mix for 10-20 seconds on reverse, speed 3-4 with the aid of the spatula to incorporate
Pour mixture into prepared tin and level the top. Bake for 1 ¼ - 1 ½ hours. Cover with foil half way through cooking if the cake is browning too much.
Cool in the cake in the tin.
