Ingredients

CHOCOLATE BISCOTTI

  • 200 g plain flour
  • 200 g sugar
  • 120 g dark chocolate pieces
  • 1 tsp baking powder
  • 75 g cocoa powder
  • 50 g pistachios
  • 125 g raw almonds
  • 2 eggs, Room temperature
  • 1 level tsp Vanilla Paste
  • 85 g Butter, Softened

Recipe's preparation

  1. Preheat oven to 180 degrees.

    Place butter and sugar into bowl and blend 1 minute speed 4. Add eggs 1 at a time and vanilla after 30 seconds.

    Add flour, baking powder, cocoa powder and mix for 6 seconds, Speed 4 until combined.

    Scrape down sides and add broken up almonds, pastachios and chocolate chips and mix for a further 6 seconds, Speed 4. Mix should be well combined.

    Turn out mixture onto Thermomat and separate in half. Form mixture into two logs.

    Place logs on baking tray with either baking paper or Oven Mat.

    Bake at 180 deg for 20 - 30 minutes.

    Remove biscotti logs from oven and allow to cool to touch, using a serated bread sharp knife to cut into 1cm slices.

    Place slices back on baking tray and bake for 10 minutes at 180 degrees take out and cool for 20 minutes.
