Ingredients
For the Cupcakes
- 260 g plain flour
- 180 g raw sugar, I used Rapadura Sugar
- 25 g cacao powder
- 5 g baking powder
- 1/2 teaspoon salt
- 100 g Grapeseed Oil or similar
- 220 g water
- 1 teaspoon vanilla extract/paste
- 1 tablespoon apple cider vinegar, or white vinegar

Add all dry indredients to TM bowl and combine 5s/sp10 and then set aside
No need to clean bowl; Add all wet ingredients to TM bowl and blend 5s/sp7.
Add dry ingredients back into TM bowl and combine 15s/sp4
Pour the mix into the cupcake papers filling to 2/3 full.
Bake for 20mins or until a toothpick inserted comes out clean.
Cool completely before icing with your choice of deliciousness.
Set Oven temp to 180 degrees C and line a 12 hole muffin tray with cupcake papers

A perfect recipe for my sons day care birthday party as I found out today there is one child who's highly allergic.
These are so good!! I changed it a bit. I used 25g custard powder instead of cocoa and I used 230g Buttermilk instead of water and vinegar.
Great recipe! Needed an egg free cake for an upcoming birthday party, this one is simple and they turned out well. I made 18 smaller cupcakes and only baked for 12 minutes. Nice even without icing.

I had forgotten to bake for a new girl starting at work, and realised I didn't have any eggs! Might have just been that I had smaller patty pans, but I comfortably made 16 muffins (even over-filling the cases) and they were cooked in 15 minutes, which was a bonus too as I was on a tight schedule!
