Ingredients
Chocolate Mandarin Cake
- 300 g mandarins
- 200 g dates, soaked in 1/2 cup boiling water, (If using fresh dates, pit first)
- 2 eggs
- 180 g raw sugar
- 180 g rice flour
- 1 tsp baking powder
- 1/2 tsp bicarb soda
- 35 g cocoa powder
- 100 g almond meal

1. Place whole mandarins (including skins) in a saucepan, cover with water and bring to the boil. Drain and repeat, reducing to a simmer once boiling, and cook for an hour.
2. Drain and cool.
3. Preheat oven to 180C and grease and line a 20cm springform tin.
4. Place drained mandarins, dates and date soaking water into the bowl and blend for 20 sec/speed 5. Scrape down sides of bowl.
5. Add eggs and sugar and blend for 20-30 sec/speed 7, or until light and creamy. Scrape down sides of bowl.
6. Add flour, baking powder, bicarb soda, cocoa and almond meal and blend for 20-30 sec/speed 4, using the spatula to assist.
7. Pour into prepared tin and bake for 45-50 mins, or until an inserted skewer comes out clean.
8. Leave in tin to cool, then decorate with orange zest and icing sugar and a dollop of low fat greek yoghurt.
This cake is gluten and dairy free, and has no added fat

Can also be made as mini muffins:
Makes 48
Spray a 24 hole mini muffin tray with oil spray and bake at 200C for 12-15 mins, or until an inserted skewer comes out clean.

Love this cake, very easy and so yummy.
Tasty! Used gluten free corn flour instead of rice flour as that was all I had. I think I could taste the difference in the texture but it was still nice.
Also, I had already juiced mandarins for a different recipe, so I used half and half- juice & pulp- instead of the boiled mandarins, and just added them raw. It all worked beautifully.
Bake cake at 180C
Can you please confirm that the cake is to be baked at 200 degrees, the same as the muffins?
I haven't tried to myself, but couldn't see the harm in trying! Let us know how it goes
Im wondering if I can substitute the almond meal for something nut free as Id like this to be playgroup friendly. But i will still be making this week for our household anyhow
