Ingredients
- 2 teaspoons olive oil
- 1 brown onion, Quartered
- 2 zucchini
- 1 carrot
- 2 cloves garlic
- 1 30g packet taco seasoning
- 500 g lean beef mince
- 2 tbsp tomato paste
- 400 g Tinned tomatoes
- 5 25g flour tortillas
- 100 g Extra light tasty cheese
- 2 tbsp light sour cream

1. Preheat oven to 180oC fan forced. Spray a springform tin lightly with olive oil.
2. Place onion, zucchini (roughly chopped), carrot (roughly chopped) and garlic cloves into bowl and chop 3 sec/sp 5. add oil and sauté 100oC/3 min/sp 1.
3. Add seasoning and mince and cook "Counter-clockwise operation" 100oC/5min/sp2, or until browned.
4. Add tomato paste and tomatoes and cook "Counter-clockwise operation" 100oC/10mins/sp 2.
5. Place 1 tortilla over base of prepared pan. Add 1 cup of mince mixture. Repeat with another tortilla and beef, and continue layering with remaining tortillas and beef, finishing with a tortilla.
6. Sprinkle to top with cheese, then bake in the oven for 20mins or until top is brown
Tip
Serve with a dollop of sour cream

Loved this recipe. Easy to make and pretty healthy. Would make a great base for a sheppards pie too. Big thumbs up from kids too!
Was yummy! Used a cheap tin of tomatoes so had some liquid excess, but it drained out & held together perfectly. Had it for lunch the next day & again for dinner. Reheated slices in the sandwich press & the cheese on top was oh so scrumptious!
