Ingredients
Cake
- 125 grams Butter
- 125 grams cream cheese
- 125 grams castor sugar
- 2 eggs
- 125 grams GF Self Raising Flour
- 1 teaspoon vanilla
- 1 teaspoon GF baking powder
Icing
- 250 grams Butter
- 250 grams condensed milk
- 1 teaspoon vanilla
- Food colouring

Pre heat your oven to 180 degrees celcius.
1.Place butter and sream cheese in bowl and mix on speed 6 for 6 secs, scrape down.
2. Add castor sugar and vanilla and mix on speed 6 for 15 secs, scrape down.
3. Add eggs and mix on speed 6 for 4 secs, scrape down.
4. Add baking powder and flour mix on speed 4 until all ingredients just combined.
5. Spoon into mini cupcake cases and bake in a preheated moderate oven for 8 mins or until cooked.
1. Place all ingredients into bowl and mix on spped 6 until incorporated. (Depending on the humidity and temperature you may need to vary the amount of condensed milk. I use less when hot. If it is too runny refridgerate and it will set.
2. Pipe onto cupcakes.

I will not add the food colouring, divide the icing up and then add colour.
