Ingredients
Cupcake
- 60 grams Maple syrup
- 160 grams full cream milk
- 120 grams Dark Brown Sugar
- 150 grams unsalted butter chopped
- 75 grams white chocolate melts
- 150 grams plain flour
- 50 grams Self Raising Flour
- 1 egg
Fudge Frosting
- 175 grams Dark Brown Sugar
- 100 grams unsalted butter chopped
- 1/4 teaspoon table salt
- 60 grams full cream milk
- 1 teaspoon vanilla extract
- 160 grams icing sugar

Preheat the oven to 160 degrees
Add maple sryup, brown sugar, milk, butter & white chocolate to the bowl. speed 1/temp 37 degrees/ 5 mins
Add both the flours to the mixture. speed 3/5 secs. Scrape the sides of the bowl then add the egg speed 4/30 seconds.
Pour mixture evenly between the cupcake pans. Cook for 20-25mins or until a skewer comes out of the middle of the cake clean. Allow to cool.
I made the frosting while the cakes cooled.
Add the brown sugar, butter & salt to the bowl. speed 2/90 degrees/ 5 mins sugar should be dissolved.
Add the milk & vanilla speed 2/100 degrees/5mins
Add icing sugar speed 4/20 seconds
Pour frosting over your cupcakes. If the frosting sets too quickly heat again for a couple of minutes on 90 degrees/speed 4
Serve once cooled & frosting has set.
I kept mine in a airtight container in the cupboard. They did not last long!! I would keep them in the fridge through hotter months.
There is also a bit of frosting left over, I popped it into a container & heated up a few nights later & poured over icecream with some almonds serioulsy amazing!!

These are yummy i didnt make the icing as they were sweet enough without it. They seem to have quite a dense texture. Everyone enjoyed them, thank you
