Ingredients

Dough

  • 70 grams sugar
  • 250 grams Butter, Softened and cubed
  • 140 grams Self Raising Flour
  • 140 grams plain flour
  • 2 teaspoons Vanilla Essence or Paste
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 180 degrees
  2. Add sugar into bowl and mix 15 seconds, speed 10. Scrape down bowl.
  3. Add cubes of softened butter, mix 15 seconds, speed 4. Scrape down bowl.
  4. Repeat, 10 seconds, speed 4. Scrape down bowl.
  5. Add remaining ingredients (flour, self raising flour, salt and vanilla) and mix 20 seconds speed 4. Scrape bowl and mix a further 5 seconds speed 4
  6. Spoon biscuit mixture into cookie press with star disk attached and pipe onto an ungreased (no baking paper needed either) baking tray.
  7. Bake in oven for around 8-10 minutes or until edges of squiggles are JUST turning brown. Keep an eye on them.
  8. Remove from oven and leave to cool on tray, once cooled store in an airtight container. Should store well for 1, possibly 2 weeks.

Tip

The trick is not to overcook them. If they go too brown they will be crispy and not have that beautiful shortbread texture we all love.

You could coat in icing sugar or dip half in chocolate for an extra special treat. I just leave them plain as that is how my Nanna (Maureen) made them for Christmas every year. Enjoy.

    Pribi06: I used a canvas piping bag with a small nozzle (Bought bigger since). I had to get my husband to pipe because it was difficult for me. Next time I am going to try with a plastic piping bag AND I'm going to buy a gun when I research a good one 😂. Well worth it though.

    I don't have a cookie press...is the mixture soft enough that you could use a piping bag with a large nozzle?
