- 225 g brown sugar
- 360 g plain flour
- 1/2 tsp bicarbonate of soda
- pinch salt
- 1 dessert spoon ground ginger
- 113 g Butter
- 1 egg
- 180 g golden syrup

- Add sugar to bowl cover and 4sec/10speed.
Add flour, soda, salt, ginger and mix "Counter-clockwise operation" speed 6 for 20 seconds
Add butter 20sec/6speed until butter rubbed in
Add egg and and golden syrup 10sec/speed6
Shape a heaped teaspoonful of mixture into balls, place on lined baking tray, push down with fork and bake for 15 minutes in a moderately slow oven 160 degrees celsius
Tip: if too wet, roll into a sausage or two and roll in glad wrap and cool down in fridge until you can cut off pieces to roll into shape and place on biscuit sheets ready to cook
