Ingredients

Nans cherry cheese strudel

  • 125 grams cream cheese
  • 125 grams ricotta cheese, Firm from deli
  • 60 gram caster sugar
  • 1tsp Vanilla Paste
  • 1lg egg
  • 5 sheet Filo Pastry, I like fresh
  • 80 grams Ghee, Melted butter will do
  • 40 grams breadcrumbs
  • 1 jar sour cherries, Morello drained well
  • 1 tbsp flaked almond
  • icing sugar, To dust

Recipe's preparation

    Strudel
  1. Add first 5 ingredients and mix on speed 4 till smooth , remove to a bowl and put in fridge to firm not to Long or will be hard to work with 😊
  2. Lay out 5
    sheets filo and cover with tea towel to stop drying out,one at a time with pastry brush, coat each sheet filo with melted ghee placing on top of each other till you have 5 layers,sprinkle with breadcrumbs

    then put cheese mix down one side of longest side see picture⬆️ Top with cherries and almonds use your mat to assist with rolling tuck in sides before you roll and brush with melted ghee

    place in hot oven 200 for 15 mins lower heat and continue to cook for further 5-7 mins till nice and golden you can cover with oven paper if it goes to dark depends on your oven ,cool and dust with icing sugar 😊
