Ingredients

Dough

  • 150 grams Coconut sugar, or raw, rapadura, etc.
  • 260 grams Spelt Flour White
  • 3-4 teaspoons ginger powder
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 130 grams Butter
  • 120 grams honey
  • 1 egg

Recipe's preparation

  1. 1.  Preheat oven to 180 degrees.

    2.  Mill sugar 5 secs, sp 9.

    3.  Add flour, ginger, baking powder and salt.  Mix 5 secs, sp 5.  SET ASIDE.

    4.  Melt butter and honey 2 mins, 50 degrees, sp 2.

    5.  Add dry ingredients back to TM bowl, plus egg.

    6.  Knead 30-40 secs Closed lid"Closed lid" Dough mode"Dough mode"

    7.  Drop by the teaspoon full onto baking paper-lined baking trays.

    8.  Bake 10-12 mins until lightly golden.  For soft/chewy cookies, allow to cool on tray for 5 mins, then remove onto cooling racks.

    Made these with a few changes (used what I had) and they are SO good.

    Wanted to add some sunflower seeds in to use less flour, so used 75g of milled sunflower seeds + made up the rest with GF flour. Added only 2 tsp of ginger but an extra (large) sprinkle of nutmeg and allspice (from my Mum's old gingerbread recipe!) and 100g honey and I think a little less rapadura. Still plenty of sweetness and really really full of flavour!

    It came out pretty runny, so just made it as a slice instead. Cut once it had partly cooled. Still perfect!! (I forgot the baking powder in the end too but they still worked.)
