Ingredients
Vanilla Cake
- 140 g raw sugar
- 170 g butter at room temperature
- 3 eggs
- 140 g self-raising flour
- 1 teaspoon vanilla extract
Icing
- 260 g raw sugar
- 110 g butter at room temperature
- 1/4 teaspoon vanilla extract
- 2 tablespoons Milk

Grease two 20 cm cake tins and line base with baking paper. Preheat oven to 180 degrees C
Place sugar in TM bowl and process for 10 seconds on speed 9
Add the butter and mix together for 20 seconds on speed 5.
Scrape down the sides and set blades going on speed 5 and add eggs one at a time through the hole in the lid. This will take about one minute.
Add the flour and vanilla extract and mix for 10 seconds on speed 5. If not quite incorporated scrape down and turn quickly up to speed 6 for a second.
Pour into prepared cake tins and bake for 20 to 25 minutes until a skewer inserted, comes out clean. Allow to cool in tin for 5 minutes before removing and cooling on cake rack.
To make the icing place sugar in TM bowl and process for 10 seconds on speed 9.
Add butter, vanilla extract and milk and mix for 10 seconds on speed 5.
Spread slightly less than half the icing over one cake and then place the second cake on top. Swirl the rest of the icing on the top and sides of the cake.

Just made 1.5 times the recipe in 2 x 24cm tins - layers look great. Will be using a different buttercream recipe
Awesome cake .. I used my own buttercream. Definately didn’t eise
enough for two cakes but i was ok with that .
Nice cake . It just doesn't rise much. Only enough for one cake not two. The buttercream was a bit grainy in future mill it for longer.
Made this cake yesterday for my childs birthday cake. I added a drop of gel food colour to make it pink as that was the request from the threenager. Cake mix tasted great but I was concerned that it would not rise too much. It didn't. Used the cake anyway and it tasted lovely. Butter cream icing was a little sweet and still a bit grainy. I should have scraped the bowl and milled again. Would definitely use this recipe again but will try it in cupcakes next time.

Making this cake for birthday tomorrow, didn't put into two tins and didn't rise as much as I though it would making another batch to make it a bigger height double cake. Super easy to make and batter tasted great and so does cake.
Deliscious Cake My daughter made this for my birthday and made it luscious by doing 2 x the cake mix for 2 large layers
Have made the frosting several times now, it is so easy snd works every time. I add about quarter teaspoon of gel food colouring for birthday cakes. Looks great. However tried the cake recipe without success, tastes ok but doesnt rise, I think its because I add baking powder to plain flower, I will try again with store bought self raising flower.
