- 120 grams Butter
- 150 grams brown sugar
- 1 egg
- 1 level teaspoon vanilla bean extract
- 150 grams Whole meal plain flour
- 150 grams plain flour
- 1/2 teaspoon baking soda

1. Put butter, sugar, egg and vanilla extract in TM bowl and cream for 1 minute on Speed 6.
2. Add flours and baking soda and mix for 30 seconds on Speed 4. Check consistency and repeat if necessary.
3. Use spatula to scoop dough out onto a large piece of cling wrap. Roll into a 3cm diameter log and wrap tightly with the plastic. Place in fridge to firm for at least one hour.
4. Cut into 3mm thin slices and place on baking tray, well separated. Bake on 200oC oven for about 10 minutes, or until lightly browned around the edges and biscuits are firm to the touch.
5. Allow to cool on tray before removing with a spatula and placing on a cooling rack to finish cooling completely.
Tip
Each cookie is worth 1 ProPoint on Weight Watchers. Awesome!
