Ingredients
Crunchy Nut Cornflakes
- 120 g macadamias
- 250 g Cashews
- 280 g almonds
- 200 g Cornflakes, natural
- 200 g oats, (gluten free if required)
- 60 g honey
- 100 g coconut oil
- 40 g Coconut Syrup
- 100 g Shredded coconut, (optional)

I'm cooking this todayRecipe's preparation
1. Preheat oven to 180C. Line 2 baking trays
2. Place macadamias, almonds and cashews into Thermomix bowl and chop for 3 seconds / speed 5.
3. Put nut mix into a large bowl and add the cornflakes, oats and coconut (if using). Toss to combine
4. Place honey, coconut oil and coconut syrup into Thermomix bowl and cook for 1 minute / 50C / speed 2.
5. Pour melted syrup over cornflake mixture and toss to coat.
6. Pour mixture onto baking trays and bake for 10 - 15 minutes, stirring mixture after 5 - 6 minutes to ensure even toasting
Tip
Store in an airtight container
Dried fruit could be added if required

I love this! Thanks only query is what recipe do you use for your coconut syrup? There seems to be lots of ways to make it.
