- 375 grams Self Raising Flour
- 100 grams Cold Butter, Chopped finely
- 220 grams caster sugar
- 1 1/4 Cup buttermilk
- 1 egg
- 135 grams dark chocolate bits
- 2 teaspoons Orange rind, Finely grated

Preheat oven to 200/180 degrees celcius fan forced. Grease mini muffin trays.
Sift flour into TM bowl. Add butter then mix 5 seconds/speed 8 or until it resembles breadcrumbs.
Add sugar, buttermilk and egg into TM bowl and mix for 10 seconds/speed 6. Scrape down the sides of bowl and if not quite mixed through slightly mix with spatula. DO NOT overmix, mixture should be lumpy.
Add chocolate bits and orange rind then mix for 10 seconds/speed 4.
Divide mixture into muffin trays and bake for 25 minutes before turning, top-side up, onto wire rack to cool.

Made a gluten free version by substituting the flour. Really nice and still quite fluffy! Not something that usually happens with GF muffins Also just peeled a whole orange with a vegie peeler and finely chopped it at the start of the recipe. Delicious!
There was a mistake made when the recipe was first put up that was fixed a few days later so maybe you need to print it again and try again before you make these statements
This recipe is wrong, the flour seems too much and the buttermilk insufficient. I saved my mix by adding another egg and increasing the buttermilk. This recipe should be removed from the site as it is so wrong. I know the recipes are untested, that's the risk we take. Have made a lot of lovely recipes from this website and not had any failures so far. I cant work out how some members have sent positive vibes about this recipe, cant be possible if you follow exactly as Pingping has posted. Sorry! I needed to post this warning to other members
I tried the recipe twice, followed every step closely. Its disappointing that result of the muffins are dense and hard, even though they look perfect

5 stars isn't enough..They are incredible. So deliciously light and delicate in flavour..OMG Making these again. Might even make a cream cheese frosting!!
Very yummy, will definitely make again! Mine only took 18 minutes to cook. I also added lemon juice to my milk instead of buttermilk and worked out well.
A lovely muffin with perfect texture, a bit of zing with the rind and of course chocolate.!! No buttermilk in my house (who carries buttermilk?!!) so 1 tsp lemon juice in the milk sufficed.
I did do my sugar with rind and then added other ingredients to save a bit of fiddle, worked just fine
So sorry made a typo, should have been 1 1/4 cups buttermilk i have now edited the recipe try making them again because they are really nice Thanks for pointing it out
Hi Pingping are you sure the ingredients are listed correctly? My batter was as thick as cookie dough and first batch came out like rock cakes, so I made the left over batter into biscuits and they came out awesome. They have a really lovely flavor and I'd like to make them as muffins - can you check the ingredients? Seems like not enough liquid. Thx!
