Ingredients

Sweet pastry dough

  • 80 g Butter, cold & diced
  • 50 g sugar
  • 20 g almond meal
  • 1/2 egg, beaten, half for the pastry half for the almond cream
  • 130 flour
  • pinch salt
  • dash vanilla paste (or extract)

Honey almond cream

  • 80 g Butter
  • 80 g almond meal
  • 40 g honey
  • 1 teaspoon corn starch mixed with 1/2 MC water
  • 1/2 egg
  • 2 teaspoon Rum

  • 500 g Figs

Recipe's preparation

    Sweet pastry
  1. Place sugar into TM and pulverise 5 seconds speed 10.

    Add the butter and cream with the sugar 10seconds speed 6. Use the spatula to help the butter if necessary.

    Once the butter and sugar are well mixed, add the almond meal, mix speed 4 for about 5 second, then add the 1/2 egg and mix 5 seconds speed 4, scrape everything down and mix again for 5 seconds speed 4.

    Finally add the flour, pinch of salt and the dash of vanilla paste (about 1/8 of a teaspoon) and mix about 15 seconds speed 4 until everything is mixed.

    Bring the pastry together, form into a disc and wrap it with plastic wrap. leave it to rest in the fridge for at least 45 minutes. (no need to wash the TM bowl before making the almond cream)

     

     

  2. Honey almond cream
  3. Place all the ingredients in the TM, mix 20 seconds speed 4 or until everything is well mixed.

     

  4. Preheat the oven at 170 degree

    Roll the pastry with a little bit of flour and line the tart pan, if the pastry break a little add some dough to cover all the pan.

    Spread the almond cream on the sweet pastry, cut the figs in half (or quarters depending of their size) and place them on the almond cream.

    Bake the tart for 25 min, until the pastry is nicely cooked and the almond cream should be slightly colored.

Tip

If you don't have time to wait for the pastry dough to rest before rolling it you can just press it down in the tart pan and place it in the fridge while you make the almond cream.

This tart is also very nice with peaches, apricots or pears.

    I have made this tart with figs, nectarines and peaches and it's delicious every time. It is easy to make, presents well and lasts a week or so in the fridge. Many thanks for sharing, it's a regular for when I have guests.

    Recipe worked perfectly, I didn't add the rum however still tasted delicious. Was a hit with my partners parents and used up all the figs!

    Very nice.  Made with baileys instead of rum ( had a bad experience with rum at 17) and replaced the sugar with rice malt syrup
