Ingredients
Meatballs
- 300 gram chicken, breasts
- 300 gram chicken, thighs
- 90 gram dried apricots
- 90 gram breadcrumbs
- 20 gram parsley
- 75 gram macadamia nuts
- 1 tsp curry powder
- 1 clove garlic
- 1 onion
- 1 egg
- Salt & pepper to taste
Sauce
- 1 onion
- 1 clove garlic
- 30 gram olive oil
- 1 tablespoon Vegetable stock paste
- 200 gram Tinned apricots
- 100 gram juice from tinned apricots
- 400 gram tinned tomatoes diced
- 200 gram water
- 1 tsp curry powder
- 300 gram sweet potatoes, peeled and cubed

Place 150 grams of roughly chopped chicken breasts and 150 grams of roughly chopped chicken thighs into TM bowl. Mince on speed 7/7 seconds. Set aside
Repeat with remaining mince. Set aside
Place apricots, garlic, breadcrumbs, parsley, onion, curry powder, macadamia nuts into TM bowl, chop speed 6/7 seconds.
Add the minced meat back into the bowl, add the egg and salt and pepper to taste. Mix together Speed 4/reverse/15 seconds to combine. If need be you may have to use spatula to get it really mixed well.
Shape into meatballs - the number you get will depend on the size of the balls.
Lightly grease the varoma and tray and place meatballs in to varoma.
Set aside to prepare the sauce.
Place onion and garlic clove in TM bowl.
Add curry powder
Chop Speed 5/6 seconds. Scrape down bowl.
Add oil and saute 2 minutes/varoma/speed 2.
Add stock paste, apricots, juice, tomatoes, water.
Placed peeled and cubed sweet potatoes into basket and insert into TM bowl.
Insert lid, and place varoma on top. Steam 20 minutes/varoma/speed 2.
Check chicken is cooked. Remove varoma, upend the contents of basket into TM bowl. Blend speed 5/10 seconds. If you like a chunkier sauce, use Turbo for 2 - 3 seconds. If you like a smoother sauce, increase the time to blend.
Serve the meatballs and sauce together.

To make this gluten free, simply substitute the breadcrumbs with extra nuts
