Ingredients
Pesto
- 50 grams Permesan, cubed
- 1 clove garlic, peeled
- 40 grams pine nut
- 1 1/2 cups --- Basil leaves
- 100 grams olive oil
Burgers
- 500 grams Beef, minced
- 1 small onion, halved
- 1 teaspoon Oregano, dried
- 50 grams tomato paste
- 50 grams mozzarella, cubed
To Serve
- 4 Turkish rolls, halved
- 2 tomatoes, sliced
- 1/2 red onion sliced
- 1/2 cup pitted olives, sliced

Place parmesan and garlic into mixing bowl. Grate 10 sec speed 9.
Scrape down sides of bowl.
Add pinenuts and basil leaves. Mix 10 sec speed 6.
Rotating on speed 4 add oil through mixing bowl lid with mc in place.
Mix till well combined.
Place mince, onion, oregano and tomato paste into mixing bowl and turbo 1 second 4 times to mix.
Shape into 4 burgers and push a cube of cheese into the middle of each burger.
Cook in frying pan approx 7 mins each side.
Spray rolls on inside with olive oil and toast in grill.
Divide tomatoes, onion and olives between rolls, place cooked burger on top and cover in pesto.

Delicious thank you very much for this, we love burgers in this house and we have so much basil growing i never know what to do with it
I'm adding the below comment for my future referrence as I'm not sure how else to do it to remind myself....
I used 50g of olive oil in the pesto, i found 100 too much for my taste.
I also added 2 eggs and 50g of flour to the burger patties to hold them together better
