Ingredients
Chicken Pongteh
- 1 onion, (peeled & halved)
- 2 cloves garlic
- 4 heaped tablespoons fermented soya beans, (rinsed thoroughly)
- 2 level tablespoons dark soya sauce
- 5 dried shitaki mushrooms, (soaked in water till soft, then sliced in half - optional)
- 60 grams bamboo shoots, canned, (optional)
- 40 grams oil
- 650 grams Chicken Thigh meat, (cut in 4 cm cubes)
- 2 large potatoes, (cut into 3 cm pieces)
- 100 grams water

Place onion, garlic, dark dauce and fermented beans into TM bowl and chopped for 20 seconds at Speed 7. Scrape sides of bowl and chop for an additional 10 seconds at Speed 7 till smooth paste is formed.
Add oil and saute for 2 minutes at Varoma Temperature, Speed 1.
Add mushrooms ( if using ), and cook at Varoma temperature for 3 minutes, Reverse and Speed Soft.
Add chicken, potatoes and cook at 100°, Reverse, for 15 minutes at Speed Soft or tillchicken is cooked and potatoes are soft.. If using bamboo shoots, this can be added through open lid after the first 10 minutes.
When cooked, you can add 1 sliced green chilli as a garnish.

Tip
This dish is traditionally cooked with belly pork but I have use chicken as it doesn't take too long to cook and there are quite a few people who doesn't eat pork for health or religious reasons.

Tried this recipe tonight. It was very tasty and easy to prepare.
Just a note: I cut the potato to < 2cm cubes and it took about 25minutes for them to get really soft and soaked through with the sauce.
Tried this for the first tiem this evenig. It was extremey delicious, as good as my Mum's which I haven't tasted for ages.
