Ingredients
Dumplings
- 3 cloves garlic
- 2 centimetres ginger
- 1/4 bunch coriander
- 300 grams chicken
- 200 grams Prawns
- 15 grams fish sauce
- 15 grams soy sauce
- 1/2 teaspoon sugar, brown or palm (optional)
- 1 package wonton wrappers, See Note
Broth
- 3 cloves garlic, peeled
- 2 centimetres ginger, peeled
- 1/4 bunch coriander, leaves and stem
- 1.5 litres water
- 1 teaspoon stock paste, vege or chicken
- 30 grams fish sauce
- 30 grams soy sauce
- 1/2 teaspoon sugar, brown or palm (optional)
- 5 pieces star anise
- 1/2 carrot, peeled into ribbons with a vege peeler
- 1/2 zuchinni, peeled into ribbons with a vege peeler
- 4-5 mushrooms, sliced thinly
Rice
- 350 grams white rice, VERY WELL RINCED IN THE STEAMING BASKET
- 500 grams Extra Water, if required

- 200 grams Prawns, raw, peeled
- 6 cloves garlic
- 4 centimetres ginger
- 1/2 bunch coriander
- 45 grams fish sauce
- 45 grams soy sauce
- 1 tablespoon sugar, brown or palm (Optional)
- 1 teaspoon stock paste, vege or chicken
- 5 pieces star anise
- 1/2 carrot
- 1/2 zuchinni
- 4 - 5 mushrooms
- 350 grams white rice

Add 6 garlic cloves and 4 centimetres of ginger to the bowl, chop 5 seconds, speed 6. Scrape down sides.
Add half bunch of coriander (reserve a sprig for garnish) to bowl, chop 5 seconds, speed 6, scrape down bowl. Repeat until finely chopped.
Place half of garlic, ginger and coriander mixture aside.
Add chicken, prawns, fish sauce, soy sauce and sugar to bowl.
Turbo 5 - 6 times until well mixed and chicken and prawn meat is minced.
Lay wonton wrappers on a clean flat surface, spoon a teaspoon sized amount of mixture on each wrapper.
Wet the edges of the wonton wrappers with water and fold ends together.
Lightly oil the Varoma dish and tray and place dumplings with a little room around them.
Do not clean the bowl. Add the reserved garlic, ginger and coriander mix, water, stock, fish sauce, soy sauce, sugar and star anise.
Add the well rinsed rice in the steaming basket (make sure the rice is well rinsed otherwise your broth will be very cloudy).
Place the lid on and the Varoma with dumplings inside on top. Cook for 18 minutes, Varoma Temp, Speed 3, "Counter-clockwise operation" reverse.
Remove the steamed rice and place in a Thermoserver.
Add the carrot ribbons, zuchinni riboons and sliced mushrooms to the bowl, also add 500ml of water if the water level is below the 'I' mark on the side of the bowl.
Cook for 3 minutes, Varoma Temp, Soft speed "Gentle stir setting" , reverse "Counter-clockwise operation" .
Check the dumplings are cooked through, if not cook in 2 minute bursts on Varoma Temp, Soft speed "Gentle stir setting" , reverse "Counter-clockwise operation" , until cooked.
Serve dumplings in broth (remove star anise) with carrot ribbons, zuchinni ribbons and mushrooms, topped with a little extra coriander, with rice on the side.

This recipe looks confusing and like there are lots of steps but it is really easy!
If you cannot get Wonton wrappers you can use Gow Gee wrappers. They are round and a little thinner which can be nicer in a soup.
You can omit the wrappers altogether and steam the chicken and prawn mixture in 'balls', this would make the dish gluten and carb free (with the use of GF soy and fish sauce).
Rice is optional, just leave out the rice step and don't add the extra water.
Broth is optional, just steam dumplings over water.
You can add more veges just adjust the cooking time.

Yum this was so delicious and easy to make.
Yum! I had mine as meatballs (no wrappers). I also added rice noodles into the bowl at the end and cooked for an additional 4 min/reverse/100 deg/soft spoon speed.
I didn't have any chicken so just used prawns. I only cooked wontons. Delicious
We skipped the rice, didn't need plenty of food. My kids loved so much they had seconds and thirds!
This dish ticked all the boxes! Full of flavour, nice and healthy. I didn't do steamed rice but added rice stick noodles. thankyou for a great dish!
