Coconut Lime Chilli Chicken with Veggie Rice
- 500 grams chicken breast, (Cut into thick strips, 1.5cm x 7cm)
- 250 grams basmati rice
- 500 grams water, Pre-boiled
- 1 lime
- 1 zucchini
- 1 carrot
- 1 teaspoon raw sugar
- 400 grams coconut milk
- 1 tablespoon chilli flakes
- 50 grams Cashews
- 1 tablespoon plain flour
- coconut flakes, For garnishing

- Place carrot and zucchini into jug. Turn timer to 3 secs, sp 6. Empty jug and place mixture into Thermoserver.
- Weigh rice into simmering basket.
Pour water and coconut milk over rice in the simmering basket into jug. - Add chicken tenderloins to varoma tray. Place chilli flakes, lime slices and coconut flakes around chicken to infuse the flavour. Turn time selector to 20 mins, Varoma temperature, sp 3.
- Remove Varoma tray with cooked chicken. Empty cooked rice into Thermoserver and mix with carrot and zucchini.
- Add plain flour and cashews to the left over coconut milk and water mixture and blitz for 7 secs on sp 10.
- Cook 3 mins, 98 degrees sp 2.
Serve and enjoy.
