Creamy Tuscan Chicken (keto friendly)
- 50 g Parmesan cheese
- 1 --- Small brown onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 650 g skinless chicken thighs, cut into strips
- 1 tablespoon chicken stock paste
- 200 g thickened cream
- 1 tablespoon Italian herbs
- 150 g sundried tomatoes, cut into strips
- 50 g Fresh Baby Spinach

- Add parmesan to TM bowl. Grate 3 secs/speed 9. Reserve for later.
- Add garlic and onion to TM bowl. Chop 5 secs/speed 6.
Scrape down. Add oil. Saute 3 mins/100/speed 1 - Add stock paste and chicken to TM bowl. Cook 13 mins/varoma/"Counter-clockwise operation" "Gentle stir setting"
- Add cream, parmesan cheese, italian seasoning to TM bowl. Cook 4 min/95/"Counter-clockwise operation" "Gentle stir setting" MC off
- Add baby spinach and sundried tomato strips to thermoserver, and pour chicken mix over the top. Mix gently.
- Delicious served over zoodles or pasta, or equally nice on its own!

I'm doing keto at the moment and wow, am so glad I found this. Followed the recipe but added a teaspoon of smoked paprika to the herb mix and added the semi dried tomatoes at the same time as adding cream and cheese. After the last step I added the spinach and stirred through with the aide of the spatula. We had it as it was, fabulous, thank you.
Everyone loved it, i served it with fresh semolina pasta.
Instead of thickened cream i used 200ml of coconut cream and 1 tablespoon of thermomix veggie stock paste instead of the chicken stock paste.
Much too salty for our taste will try again with 1tsp of chicken stock

van der Ploeg: I used italian herbs too. I just guessed that's what "italian seasoning" meant.
I didn't get oil on the top of mine at all though. Nothing had separated. I used full fat cream (for whipping) if that makes a difference?

Super quick meal and I loved the fresh flavours from the spinach and sun dried tomatoes. I don’t think I could eat this recipe on its own though. After the cooking time, there was a huge pile of oil sitting on top of the mixture which was a bit off putting. I had to mix pasta through it to hide it all. I couldn’t find Italian seasoning at my local supermarket, so I used Italian herbs. Definitely needed salt though, so I’ll keep searching for it. Thanks for sharing
