Ingredients

Oven-Baked Lemon Chicken

  • 6 - 8 pieces chicken
  • 3 - 4 heaped tablespoons plain flour
  • 1/2 teaspoon paprika
  • salt and pepper, to taste

Lemon Sauce

  • 1 lemon rind, removed with vegetable peeler
  • 2 cloves garlic, peeled
  • 40 grams soy sauce
  • 50g grams lemon juice, freshly squeezed using TM Spatula

Recipe's preparation

    Oven-Baked Lemon Chicken
  1. Pre-heat oven to 180 degrees C.


    In a medium-sized bowl, mix flour, paprika, salt and pepper. Evenly coat the chicken pieces in the flour mixture and place in a greased baking dish, skin side down. Bake in a hot oven for approximately 45 minutes or until the chicken is starting to brown.
    While the chicken is baking, make the Lemon Sauce in the TM.
    Turn the chicken pieces (after 45 minutes of baking) and baste with the Lemon Sauce. Bake for another 15 minutes, continually basting until the chicken is browned, crispy and cooked through.

  2. Lemon Sauce
  3. Place lemon rind (or rind of two lemons if small) into TM bowl and grate for 10 seconds on Speed 10. Scrape down sides of TM bowl. Add garlic and chop for 10 seconds on Speed 10.
    Add soy sauce and lemon juice to TM bowl and mix for 20 seconds on Speed 5. Set aside in small bowl, ready for basting.

Tip

As children, this was one of our family's favourite recipes, especially our dear Dad's. He still loves this simple dish and even came to taste test our TM version. It was given the thumbs up! tmrc_emoticons.)

This recipe can be easily be doubled for larger families or to create more sauce.

While 'Dad's Favourite Oven-Baked Lemon Chicken' is baking, steam Asian-inspired coconut rice in your TM basket and some veggies (carrots, green beans, zucchini, corn, etc) in the Varoma at the same time. To make the rice, simply add 300g of rice (or a quantity that you prefer) to the TM Basket and rinse thoroughly with water. Place 400g of Coconut Cream (or Coconut Milk) and 500g water in the TM Bowl and cook according to the EDC 'Cooking Rice' instructions (EDC - pg. 22). Place your Varoma (filled with veggies) on top. A delicious accompanyment to this tasty meal.

Serve the rice with the crispy Lemon Sauce baked on the bottom of the dish -- this is the best part!!

    I've made this dish tonight and it is great. I've used skinless chicken thighs, and followed the suggestion of cooking the rice and the veggies and we ended up with a lovely hearty family meal. We'll definitely cook it again and I would not hesitate to cook it for guests as well.
