Ingredients
Quick Pasta and Lamb Casserole
- 40 grams olive oil
- 1 onion
- 400 grams lean mince lamb
- 2 small zuchinni, thinly sliced
- 1 carrot, thinly sliced
- 100 grams button mushrooms, thinly sliced
- 400 gram can Chopped Tomatoes
- 375 gram jar tomato-based pasta sauce or 410g can tomatoe puree
- 375 grams shell pasta, cooked

1. Preheat oven to 180°C.
2. Cook pasta in a saucepan on the stovetop, then set aside, while you prepare the rest of the casserole.
3. Mince lamb. Place 300-400g of cubed lamb (slightly thawed if meat is frozen) into TM bowl. Mince for 8-15 seconds on speed 7 until desired consistency. Set aside.
4. Place onion into TM bowl and chop for 3 seconds on speed 5.
5. Add oil and sauté for 2 minutes at 100°C on speed 1.
6. Add mince and cook for 10 minutes at Varoma temperature on Reverse + speed 1.5.
7. Add tomato and tomato based pasta sauce, carrot, mushrooms and zuchinni. Cook for 8 minutes at Varoma temperature on Reverse + speed 1.5.
8. Add cooked pasta and sauce to a 2 litre capacity casserole dish, gently stirring through.
9. Sprinkle with cheese or omit cheese for dairy free.
10.. Bake for 20 minutes without cheese or with cheese bake until golden brown on top.

I did not use mushrooms and also did not have the pasta sauce so made up same volume using 1 tsp veg stock, water, and tomato paste
Tip
Substitute other chopped vegetables as desired. This casserole could be enjoyed with or without the sauce.
