Ingredients
- 2 tablespoons olive oil
- 4-6 chicken thighs fillets, diced
- 125 grams bacon, rough chopped
- 250 grams carrots, rough chopped
- 2 celery stalks, rough chopped
- 1 large onion, quartered
- 30 grams cornflour
- 600 grams chicken stock, (or water plus stock paste)
- 1 bay leaf
- 1 thyme sprig
- 1 parsley sprig
- salt and pepper to taste
- 4 potatoes, peeled,cut into large chunks
- chopped parsley to garnish

Chop carrot and celery 15-20 seconds Speed 4. Set aside.
Chop onion and bacon 15-20 seconds Speed 4. Add carrot & celery.
Add oil. Saute 5 minutes Varoma temp "Counter-clockwise operation" Speed 1. (MC removed)
Add chicken, chicken stock, herbs, potatoes and cornflour.
Cook "Counter-clockwise operation" "Gentle stir setting" 100C for 50 minutes or until chicken is cooked through.
If chunks of potato are preferred in finished casserole, add potato after 30 minutes of cooking time.
Garnish with extra chopped parsley and serve.
Tip
By letting the potato cook right down, there is an added creaminess to the dish for those who enjoy creamy dishes but cannot tolerate dairy.

Delicious flavour but found chicken shredded and hence became best chicken soup ever. Will make again but cook chicken in Varoma and add at end for casserole.
Too much liquid and the vegetables were chopped up too finely so it ended up like soup.
A tasty casserole dish. I added my potatoes in later to keep them in larger chunks. Added less cornflour to make more like a soup and goeu casserole. Great flavours wafting through the house whilst cooking.

Ooops!! Definitely should be boneless chicken thighs!! I will go update the recipe to reduce the confusion. Glad you liked the taste though. It is yummy.
I made this last weekend, it was delicious. But I brought chicken thighs as stated in the recipe but they had bones in them so I had to roast the chicken and tear the meat off the bone once it was cooked, then add it to the casserole. I'm sure thigh fillets are what should be use.
Other than that a very hearty main.
Lovely flavors, but I will reduce the amount of stock next time.
