Ingredients
Chicken Curry
- 1 Lemongrass stalk, cut into 3cm lengths
- 15 grams olive oil
- 5 grams yellow curry paste, I use Mae Ploy brand
- 270ml can Lite Coconut Milk, I use Ayam brand
- 3 Kaffir lime leaves, crushed
- 30 grams brown sugar
- 20 grams fish sauce
- 400g can diced tomatoes
- 400-500 grams skinless chicken thigh fillets, cut into strips
- 300 grams butternut pumpkin, cut into 2cm cubes
- 100 grams green beans, halved
- 1/2 bunch coriander, leaves picked, to garnish
- 1/2 bunch thai basil, leaves picked, to garnish
- 1 lime, quartered, to serve
- Jasmine rice, to serve

Add lemongrass, oil, curry paste and coconut milk to bowl. Cook on Varoma temp, 2 mins, speed 2, "Counter-clockwise operation"
Add lime leaves, sugar, fish sauce and tomatoes. Cook on Varoma temp, 3 mins, speed 2, "Counter-clockwise operation"
Add chicken. Cook on Varoma temp, 6 mins, speed 1, "Counter-clockwise operation"
Add pumpkin. Cook on Varoma temp, 9 mins, speed 1, "Counter-clockwise operation"
Add beans. Cook on Varoma temp, 2 mins, speed 1, "Counter-clockwise operation"
Serve on jasmine rice garnished with herbs and lime to squeeze.

Our family gave this recipe 10/10. We used 25grams of curry paste instead of 5g, 5 just didn't seem enough.
Absolutely delicious and so easy to make! A recipe that's definatly at the top of my list.
Delicious! I didn't have yellow curry paste but had some TM green curry paste so used that,had run out of coconut milk so used Quirky's recipe & made some! My hubby & I totally loved this curry & will def make again!
