Ingredients

  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 6 chicken thighs fillets
  • 2 cloves garlic
  • 3 centimetre piece of ginger
  • 1 long red chilli, seeds removed, roughly chopped
  • 30 g olive oil
  • 400 g canned diced tomatoes
  • 2 tablespoons Vegetable stock paste
  • 1750 g water
  • 3 thyme sprigs
  • 2 zucchini, diced
  • 250 g Israeli (Pearl) couscous
  • thyme and coriander leaves, for garnish
  • lemon wedges for serving
  • Greek yoghurt for serving, (optional)

Recipe's preparation

    Method
  1. 1. Combine ground cumin, cinnamon and turmeric in a medium size bowl. Season and add chicken thigh fillets. Coat chicken with the spice mixture and set aside.

    2. Place onion, garlic, ginger and chilli in the mixing bowl and chop 5 sec/speed 5. Repeat if a finer consistency is required. Scrape down sides of the bowl. Add olive oil and saute 3 mins/120C/reverse/speed 1.5.

    3. Add canned tomatoes, vegetable stock paste, 250g water, thyme sprigs, zucchini, and reserved chicken. Use simmering basket instead of measuring cup and cook 30 mins/100C/reverse/speed 1 or until chicken is tender and cooked through. Transfer to a serving bowl or Thermoserver, cover and set aside while couscous is cooking. Clean and dry the mixing bowl.

    4. Add 1500g water to the mixing bowl. Place couscous in simmering basket, rinse with cold water and place in position in the mixing bowl. Cook 20 mins/100C/reverse/speed 1.5 or until tender.

     

    5. Serve cooked couscous with chicken, thyme and coriander, lemon wedges and Greek yoghurt.

Tip

Tip: Israeli (or Pearl) couscous is made from wheat and can be found in the supermarket near the rice and couscous. Whole wheat varieties are also available. If Israeli couscous is not available, substitute the end recipe with cooked rice or traditional couscous.

    Love this dish, it’s in my favourites. Simple to prepare but I find the cous cous needs less time than it says in recipe and I add toasted pine nuts through the cous cous.
    nice served with flatbread made from thermos recipe.

    This was very nice, I wasnt sure at first on the cinnamon but once you add the lemon and yoghurt it is great!

    Delicious! I served this with the Golden Jewel Blend by HBCTrading Australia (Israeli couscous, Tri-coloured orzo pasta, split baby garbanzo beans and quinoa) & it looked very exotic. My toddler said it was yummy & kept picking up all the beans thinking they were corn kernels. Thanks for sharing the recipe.
