Ingredients
All-in-one-meal
- 1-2 cloves garlic, peeled
- 450 gram cocnut cream
- 700 gram water
- 250-300 gram basmati rice, rinsed
- 1 onion, sliced
- 2 carrots, sliced
- 1 red capsicum, sliced
- 1/2 Head of Cauliflower, florets
- 16 snow peas, top and tailed
- 2 zuchinni, sliced
- 400-500 gram Prawns, peeled and frozen
- 425 gram tinned mango, drained (or 300g fresh mango cheeks)
- 100 gram Peanut Butter
- 50 gram lemon juice, roughly 1 lemon
- 1 small birsdeye chili
- lime wedges and coriander, to serve

Chop 1-2 cloves of garlic in bowl for 5 seconds speed 7, scrape down and leave in bowl. Add cocnut cream and water to bowl.
Add rinsed rice to basket, hard vegetables to varoma and frozen prawns to varoma tray and cook at Varoma, 20 minutes, speed 3. At 10-15 minutes to go, add soft vegetables to steaming tray (this depends on personal preference).
Once rice, prawns and vegetables are cooked remove from TMX. To remaining coconut cream / water mix, add drained mango slices, peanut butter, lemon juice and chili, blend for 30 seconds, speed 9 until smooth.
Add prawns to sauce mix in TMX bowl and stir 20 seconds, speed 2 until combined.
Serve rice, steamed vegetables topped with prawns and sauce garnished with lime wedges and coriander.
Tip
For those who don't like it spicy, omit the birdseye chili and it becomes mango satay prawns. This is how we make it for the kids and just add chili sauce to the adults.
If you don't have mango, we have made this with canned peaches and it is just as good.

Unfortunately this wasn't a hit for us, no one enjoyed it. The sauce was bland and needed something to boost it. A shame as it looked like a winner.
We really enjoyed this. Worked well with fresh (green) prawns at 20 minutes on varoma. Vegetables were also nicely cooked. We weren't sure about the sauce mix - we had far to much coconut cream/water mix so we poured quite a lot out before making the sauce and it was still too much liquid in that the sauce was a bit bland. It might be good to state how much coconut cream/water mix is required e.g. a cup or 2 cups. We'll try again using less fluid. Thank you very much for the recipe.

Yum! Delicious and I made hubby green because I cooked it for a friend whilst he was at work lol! It takes around 2 average size size mangoes if using fresh ones. Thank you for sharing
Fabulous recipe! loved the flavours. It was not too spicy for my kids and I think I could go even a little spicier. The rice tasted delicious after cooking in the coconut milk. I substituted the coconut cream for light coconut milk and it was lovely. I will definitely be cooking this again.
Sensational, very easy with a brilliant result, probably only need half the vegetables, sauce sensational. I added a small amount of scallops
How did you fit all of the vegies into Varoma? I left out onion and zucchini and it was tight...
I also used fresh prawns. Fingers crossed, it works! Still cooking as I write!
