Ingredients

BEANS

  • 2 Medium carrots, peeled and chopped into 3cm pieces
  • 2 Medium zucchinis, chopped into 3cm pieces
  • 1 medium brown onion, quartered
  • 2 cloves garlic
  • 1 Handful of fresh mixed herbs, (Parsley, Basil, Oregano)
  • 150 grams bacon, Diced
  • 40 grams olive oil
  • 1 can Cannelli Beans (400g), Drained
  • 400 gram can of diced tomatoes
  • 1 tablespoon vegetable stock (BCB)
  • 2 tablespoon tomato paste

Recipe's preparation

    Method ...
  1. - Place carrot, zuchinni, onion, garlic and fresh herbs into TM bowl and roughly chop for 4 seconds, on speed 5 - or until desired.

    - Scrape down sides of TM bowl.

    - Add diced bacon and olive oil into TM bowl and saute for 5 minutes, 100 degrees, speed 1.

    - Add all remaining ingredients to TM bowl and cook for 17 minutes, 100 degrees, on reverse soft speed, with MC in.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Delicious! Also made without the bacon. I thought it was slightly too salty so will use less veggie stock next time. It would definitely be too salty for me with the bacon. Love the veggies in it!

    I enjoyed this recipe. I didn't use bacon, instead I cooked an omelette in the veroma tray and used a cooking time of 15 minutes on veroma temp (last step).

    Made this for breakfast, had with cheese on toast was delicious! Enough for the next few days too!
