Ingredients
Dukkah
- 2 tablespoons sesame seeds, whole
- 1 tablespoon coriander seeds, whole
- 1 tablespoon cumin seeds, whole
- 2 teaspoons black peppercorns, whole
- 1 teaspoon fennel seeds, whole
- 50 grams almonds or hazelnuts, whole
Dressing
- 1/2 avocado
- 140 grams natural greek-style yoghurt
- 2 tablespoons fresh herbs of choice, eg mint and coriander
- 1 tablespoon lemon juice
- 60 grams water
Salad
- 800 grams cauliflower, florets
- 400 grams Canned Chickpeas
- 60 grams extra virgin olive oil
- 1 teaspoon salt flakes
- 1 bunch radish, baby, thinly sliced
- 100 grams mixed baby salad leaves
- 2 Avocados, sliced
- 1 --- Mixed fresh herbs, mint and coriander

- Place all dukkah ingredients into mixing bowl.
Dry roast for 9 minutes/100 degrees/speed 1. - Remove lid and allow to cool before pulsing 2-4 times on Turbo - 1 second.
- Store in an airtight container.
- Preheat oven to 220 degrees.
- Spread the cauliflower and chickpeas (drained and rinsed) onto baking tray lined with baking paper and drizzle with the olive oil.
- Top with 2 heaped tablespoons of dukkah and the salt flakes and toss to combine.
- Roast for 18-20 minutes until golden brown.
- No need to clean the bowl from making your dukkah.
- Place 1/2 an avocado into mixing bowl with yoghurt, herbs, lemon juice and water.
Blend until smooth and creamy - 5 seconds/speed 10. - Place your roasted cauliflower and chickpeas on a bed of mixed salad leaves.
- Top with radish, herbs and remaining avocado.
- Drizzle with the creamy avocado dressing.
- Enjoy!!!!
