Ingredients

Mutter Paneer

  • 30 g sunflower oil
  • 1 level tsp cumin seeds
  • 1 level tsp black mustard seeds
  • 1 pinches Asafoetida
  • 1 Spanish onion, 1 large or 2 medium
  • 400 g chopped tomatoes, 1 tin
  • 1 small piece piece fresh ginger, 2cm peeled & sliced into thin rounds
  • 1 level tsp ground turmeric
  • 1 heaped tablespoons tomato puree
  • 0.25 level tbsp chilli powder
  • 1 level tbsp salt
  • 1 level tsp garam masala
  • 0.15 litres water, half a tin rinsing out the chopped tomato can
  • 40 g cashew nuts, plain, raw
  • 1 level tbsp sunflower oil
  • 250 g paneer, cut into approx 1cm cubes
  • 250 g frozen peas, petite pois
  • 1 bunch fresh coriander, leaves and stalks, chopped

Recipe's preparation

  1. 1. Add the oil & heat. 5 mins, steaming temp with the MC off
  2. 2. Add the asafoetida, cumin seeds, black mustard seeds. Heat 5 mins, 100 degrees with the MC off, No counter-clockwise operation"No counter-clockwise operation" reverse
  3. 3. Add onion & ginger. Chop 3 seconds, speed 5. MC on. Scrape down the bowl.
  4. 4. Cook the onions 10mins, 100 degrees reverse No counter-clockwise operation"No counter-clockwise operation" Gentle stir setting"Gentle stir setting" MC off
  5. 5. Add all remaining spices. Cook 5mins, 100 degrees reverse No counter-clockwise operation"No counter-clockwise operation" Gentle stir setting"Gentle stir setting" MC on!
  6. 6. Add chopped tomatoes, tomato puree & cashew nuts. Cook 10mins, 100 degrees reverse No counter-clockwise operation"No counter-clockwise operation" Gentle stir setting"Gentle stir setting" MC on!
  7. 7. In a large pan or wok, heat the sunflower oil and fry the paneer cubes in a tablespoon of sunflower oil until light golden brown on all sides
  8. 8. Blend sauce speed 7 for 1min or until silky smooth and add to paneer. Cook on a medium heat for 10mins
  9. 9. Add peas and cook for a further 5mins until peas are tender
  10. 10. Serve sprinkled with the chopped corriander
