Ingredients

  • 50 g olive oil
  • 1 Onion halved
  • 4 cloves garlic
  • 2 tbsp curry powder
  • 2 tsp turmeric
  • 1/2 tsp chilli flakes
  • salt, to taste
  • 1 tbsp Black Sesame Seeds
  • 1000 g potatoes
  • 2 carrots
  • 200 g pumpkin, cubed
  • 500 g water
  • 300 g green beans
  • 2 tsp raw sugar
  • 100 g sour cream
  • 1 lemon, juice

Recipe's preparation

    Method
  1. Place oil, onion, garlic, curry powder, turmeric and chilli flakes into TM bowl. Chop for 5 seconds on speed 6, then sauté for 2 minutes at Varoma temperature on speed 1.

    Add salt, seeds and all vegetables except beans. Add water and cook for 15 minutes at Varoma temperature on Reverse + speed soft.

    Place topped and tailed beans into the Varoma dish and set Varoma into position whilst curry is cooking. Remove beans when time is up and set aside.

    Add remaining ingredients to curry and cook a further 3 minutes at Varoma temperature on Reverse + speed soft.

    Serve immediately with beans on top.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    Do you mean green peas not beans

    this was really nice but for me I reduced the curry powder as I don't like it too spicy. It did turn out a bit runny but I am hoping it will just thicken up by itself as it cools. Yes I added peas with the beans. Made heaps, enough for dinner plus enough leftovers to freeze for emergency meals

    I doubled the chilli flakes, omitted the pumpkin and in place added sweet potato. I also used white sesame seeds. This is one of the nicest vege curries I've made.

    Nice curry. I tried to 1/3 the recipe and it didn't turn out like the picture - much drier. But still great. Could probably have benefited from a few peas cooked in too.

    I'm a big eater - don't think I would have got 6 portions out of it either tmrc_emoticons.)
