Ingredients

Raw Zucchini Noodles

  • 2 Zucchinis

Raw Bolognese Sauce

  • 150 grams Semi-Sundried Tomatoes
  • 75 grams red capsicum
  • 4 medjool dates
  • 15-20 grams fresh basil
  • 1/2 Lemon (juice only)
  • 1-2 cloves garlic
  • 1 teaspoon Olive oil (good quality)
  • 1/4 teaspoon chilli flakes

Recipe's preparation

    Raw Zucchini Noodles
  1. Using a spiraliser or spirooli, make some thin raw zucchini noodles.

    Other options are to grate, ribbon peel or julienne the zucchini.

    (You could also use carrots or beetroot, or a combination)

  2. Raw Bolognese
  3. 1. Add all ingredients and blend sp6/5secs.

    2. Scrape down and repeat if necessary, until desired consistency is reached.

     

    You may want to use all the leftover knobs from spiralising the vegetables, as this will make your sauce thicker.

    Really tasty recipe! I think I will use at least one less medjool date next time as it was a tad sweet for me.
