Ingredients

Seitan

  • 230 g Vital wheat gluten flour
  • 3 tablespoon Nutritional Yeast Flakes
  • 1 teaspoon Garlic powder
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, black, ground
  • 1/2 teaspoon chilli powder
  • 250 g water
  • 2 tablespoon soy sauce
  • 2 teaspoon Worcestershire sauce

Stock for Simmering

  • 1500 g water
  • 1 tbsp Vegetable stock paste
  • 2 tablespoon soy sauce
  • 2 tablespoon Worcestershire sauce

Crumb mixture

  • 3/4 Cup soy milk
  • 1/2 teaspoon Whole grain mustard
  • 1 Cup breadcrumbs
  • 1/4 teaspoon pepper, black, ground
  • 1 teaspoon dried thyme
  • 2 teaspoon paprika, smoked, ground
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon Garlic powder

Gravy

  • 500 g Remaining stock
  • 40 g plain flour

Recipe's preparation

  1. Seitan:

    Add all seitan ingredients to bowl.

    Mix 2 min / Dough mode"Dough mode" or until combined and elastic.

    Divide into two equal pieces, wrap in plastic wrap and tie at both ends to make a "loaf" (or cut into small pieces).


    Stock for simmering:

    Add the water, stock paste, Worcester sauce and soy sauce to the clean thermomix bowl. Bring to a boil on varoma, 10 minutes, speed 2.

    Once boiling, add simmer basket with seitan loaf/pieces and put varoma tray on top to avoid splatters. Cook on varoma , 45 minutes, speed 1.

    Remove seitan pieces from broth and let cool. Slice and eat as is or crumb and bake/shallow fry (see below).

    Crumbing:

    Whisk together soymilk and mustard, set aside.
    Combine the breadcrumbs with spices, and stir together well. Dredge seitan pieces in the milk mixture, and then in the breadcrumb mixture to coat well.

    Shallow fry in pan until golden brown.

    You can bake it (but everytime I've tried it's turned out dry). If you wish to give it a go:
    Preheat oven to 190 degrees.
    Placed finished piece on an oiled baking tray. When all pieces are coated, spray tops LIGHTLY with cooking spray. Bake in preheated oven for 40-45 minutes (30-35 min for nugget sized pieces), until golden brown. Flip halfway through cooking time, if desired, but not necessary.


    Gravy:

    After cooking the seitan, you should be left with 500g of stock.
    Add 40g of plain flour and cook on 90 degrees, 7 minutes, speed 3.

    Krisdell: another vegan brand (just bought it now from iga!) is Newman's!

    Krisdell: I know, gross! 👎 I just got mine from the normal sauce section in iga. It wasn't labelled vegan and it cost the same as the others. Just have to read 5 bottles worth of ingredients lists to find it! The particular brand I got was called "Anglo". Hope that helps!

    looks great ! Where can you get vegan worstershire sauce from? the normal one contains anchovies..
