Ingredients

  • 1-2 cloves garlic
  • 65 g Parmesan cheese, cubed
  • 700 g zucchini, quartered
  • 2 large eggs
  • 10 g Bread Crumbs, GF optional, can be milled before starting
  • 1/4 teaspoon ground cumin
  • 1/4 tablespoon sea salt
  • 1/2 teaspoon ground black pepper

  1. 1. Preheat oven to 220deg

    2. Place garlic into mixing bowl. Chop 3sec/speed 7

    3. Place cubed cheese into mixing bowl. Chop 6sec/speed 7

    4. Remove cheese & garlic from mixing bowl and set aside.

    5. Place Zucchini into mixing bowl and chop 10sec/speed 4.           Squeeze as much moisture from Zucchini as possible

    6. Add reserved cheese & garlic mix, egg, bread crumbs, cumin,        salt & pepper

    7. Mix altogether 10sec/Counter-clockwise operation"Counter-clockwise operation" speed 4

  3. 8. Line 2 trays with baking paper

    9. Place approx 1/4 cup of mixture onto baking paper and press        down into approx 12cm circles. Fill tray with as many rounds as      will fit

    10. Place into oven and bake for approx 25mins. Very carefully turn       tacos halfway through cooking.

    11. Carefully remove tacos from baking paper and allow to cool          before using.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Thank you so much for this recipe. The "tacos" were so tasty. I will try again and may add a little more breadcrumbs. Whilst delicious they were flimsy and I struggled to put too much filling (which is probably better for me anyway!). I
