  • 50 g parmesan, cubed
  • 1 brown onion, peeled and halved
  • 1 clove garlic
  • 20 g olive oil
  • 400 g arborio rice
  • 1200 g water
  • 3 tbsp vegetable stock concentrate
  • 250 g broccoli, small florets
  • 250 g bacon, chopped
  • salt & pepper
  • 50 g thickened cream, (Optional)

Recipe's preparation

  1. Place parmesan into mixing bowl and grate 10sec/sp9. Set aside.

    Place onion and garlic into mixing bowl and chop 3sec/sp7.

    Remove MC. Add oil and saute 3min/Varoma/sp1.

    Add rice to bowl and 100g of water and saute 2min/Varoma/Counter-clockwise operation"Counter-clockwise operation" /sp2.

    Add stock, broccoli, bacon and remaining water and cook 17min/100C/Counter-clockwise operation"Counter-clockwise operation" /sp2, with basket placed on lid to prevent spillage.

    Pour into Thermoserver, season to taste and stir through reserved parmesan and cream (if using). Allow to rest for 10mins prior to serving and ENJOY! tmrc_emoticons.)

    Just wanted to say for anyone wondering, I halved this recipe with no problems at all. Some people suggest if you half a recipe that you need to minus 20% of the cooking time, however that was not the case with this recipe. This recipe is on our fortnightly rotation. My 6 year old absolutely loves it and begs me to make it each week.

    I was given a thermomix for Mothers day & this is all new to me. I tried this recipe tonight, im not 100% sure i understand. Does everything end up in the bowl to cook or do you put the rice in the basket to cook?
    Any help & suggestions would be greatly appreciated.

    I didn't have broccoli so made a mix of frozen vege ( thawed) and cauliflower ( blitzed until rice like consistency) and reduced water by 100g. I also added a mixture of bacon and ham to the sautée stage. My final variant was to add the butterfly wisk to the final cook stage. Turned out really nice! Yum.

    Didn't have 250 Gm broccoli, so added 250 of green veggies (broccoli, zucchini, capsicum and a few mushrooms.

    Sooo good! Made this for the second time tonight. I did 2-3 cloves of garlic, added the bacon to the onion/garlic mix to sautée, added 50ml white wine and 50ml water to the rice initially and then 1L at the second part. I also added extra broccoli and put some garlic powder and pepper at the same time as the stock. So delicious! Thank you!
