Ingredients

Bacon & Leek Risotto

  • 80 grams Parmesan cheese, cubed
  • 8 slices Short Cut Bacon roughly chopped
  • 1 leek, white part only cut into chunks
  • 2 cloves garlic
  • 30 grams olive oil
  • 400 grams arborio rice
  • 100 grams white wine
  • 2 tablespoons Vegetable stock paste
  • 1.1 litres water
  • Salt & pepper to taste

Recipe's preparation

    Method
  1. Place parmesan cheese into mixing bowl and grate 10 secs/speed 9. Set aside.

    Clean and dry mixing bowl.

    Place garlic and leek in mixing bowl and chop 3 sec/speed 7. Scrape down the sides of the bowl.

    Add bacon and chop 5 sec/speed 5.

    Add oil and saute 3 min/Varoma/speed 1/MC off.

    Insert butterfly, add rice and wine and saute 2 min/100°c/Counter-clockwise operation"Counter-clockwise operation" /speed1/MC off.

    Add stock and water and cook for 17 mins/100°c/Counter-clockwise operation"Counter-clockwise operation" /speed1.

    Remove butterfly.

    Pour into Thermoserver, stir in parmesan cheese and season as required.

    Allow to rest in Thermoserver for at least 5 minutes before serving.

     

     

Tip

Shredded chicken can be used instead of bacon

    Thanks for a beautiful recipe, needed something to serve with roasted duck legs. Beautiful, could have added butter but decided to be good. Definitely my favourite risotto recipe for my thermo to date X

    so good! i added some diced chicken breast, some spring onion and extra garlic and it was perfect, definitely needs the 5mins rest to thicken up!Smile

    Really tasty meal that's easy to make. Super rich. Definitely leave it to rest at the end so that it thickens up.

    This recipe was so easy and delicious. I halved the amount too and it made the perfect amount for lunch today and tomorrow - can't wait to eat it again!

    My hubby and I loved this (kids not so much but they're not a fan of hot wet rice normally). Made quickly on a whim.  Discovered I only had half the rice at that point in recipe so I just halved the liquid ingredients and stock. Luckily it was perfect amount of risotto. Being pregnant, I didn't want to open a bottle of wine if I couldn't drink it  so I sloshed a little apple cider vinegar and it was a good sub, gave a nice kick.

    Absolutely delicious! The kids love it! I find this recipe makes enough to feed the 5 kids and both of us adults too which is even better tmrc_emoticons.)

    I cooked this this evening and it was yummy. Only got my thermo yesterday and was so impressed how easy it was to make.
