- 80 grams Parmesan cheese, cubed
- 1 onion, halved
- 2 cloves garlic
- 40 grams Butter
- 40 grams olive oil
- 320 grams arborio rice
- 60 grams white wine
- 2 tablespoons Vegetable stock paste
- 2 chorizo sausages, cubed
- 2 Roma tomatoes, cubed
- 720 grams water
- 120 grams fresh baby spinach leaves

- Place Parmesan into bowl and grate 10secs/speed 10. Transfer to a bowl and set aside.
- Place onion and garlic into the bowl and chop 3secs/speed 5. Scrape down sides with spatula
- Add butter and olive oil. Sauté 3mins/120deg/speed 1
- Insert butterfly whisk. Add Arborio rice and saute 1min/120Deg/"Counter-clockwise operation" /speed1.5,without measuring cup
- Add wine and saute 2mins/Varoma/"Counter-clockwise operation" /speed 1.5 without measuring cup. Scrape bottom of bowl to loosen rice
- Add vegetable stock paste, chorizo, tomatoes and water. Scrape the bottom of the bowl again
- Cook 15mins/100deg/"Counter-clockwise operation" /speed 1.5 with simmering basket in place of measuring cup
- Transfer into a Thermoserver, add spinach leaves and stir in half the Parmesan cheese
- Leave to sit for 5 minutes and serve with remaining Parmesan cheese
