Risotto

  • 2 clove garlic
  • 1/2 --- red onion
  • 1 chorizo sausage
  • 250 g arborio rice
  • 100 g white wine
  • 120 g sliced mushrooms
  • 800 g water
  • 300 g Diced chicken breast or thigh
  • 5 anchovies
  • 2 tablespoon TMX vege stock concentrate
  • 20 g oil
  • 70 g parmesan
  • 12 Baby Spinach Leaves

Recipe's preparation

    Risotto
  1. Grate parmesan 10 sec/sp 9. Set aside.

    Chop garlic, onion and chorizo for 4sec/sp 5 Add oil and saute 5 min/100/sp 1

    Add rice and wine and cook 3 min/100/Counter-clockwise operation"Counter-clockwise operation" sp 1

    Add remining ingredients and cook for 17 min/100 deg/Counter-clockwise operation"Counter-clockwise operation" /sp 1

    Stir through parmesan and spinach leaves and allow to rest in ThermoServer for 3-4 minutes before serving.

    Only change I made was to use 650 instead of 800 of water and didn't have any anchovies. Everything else the same. I have learned after making a few risottos that the secret is to let them rest before serving so they are not too runny. This recipe was delicious and well received by the family (none left is usually a good indication!). I might try serving this next time with a side of broccolini tossed in olive oil, lemon zest, chilli and salt and charred on a hot plate to give it that extra balance of green.

    This was excellent. I made it exactly as per the instructions, but with 200g mushrooms and a large handful of spinach (because I need to eat more vegetables).

    For everyone who left out the anchovies, I really don't think that's necessary as I couldn't taste anything fishy and they dissolved into the risotto.

    I also thought the consistency was perfect. It seemed a little watery when I stopped the thermomix, but once it sat in the thermoserver for 3 minutes it was fine.

    The only improvement I thought it needed was a bit of freshly ground pepper.

    Will make again.

    A real winner! Very tasty and so easy.  I also reduced the water by 100g and cooked the risotto for 5 minutes longer for a slightly thicker consistency.

    Absolutely loved this recipe and even the kids had empty bowls, which is a big thumbs up. However I did replace the wine with more stock and cooked for 3 mins longer.

    I'm not sure why, but I have to cook this for an extra 10 minutes.  Totally delicious and is now a family favourite. I left out the anchovies and next time I might put in 100 mils less water because I prefer is less runny... But omg, the favour is amazing
